He reformed the practice of vinegar-making and brewing, cured wine of its disorders, saved the silk industry not of France alone but of Europe, and showed how to drive out or to tame the germs of some of the most formidable diseases. But from the first, when he studied tartrates, to the last, when he wrestled with hydro phobia, his labors had two aspects practical importance and speculative interest; and while we recognize that no man of science has been of greater economic service to his country, we must not forget how he changed the whole theory of fermentation, and played at least an important part in establishing the germ theory of disease.
