Alongside these challenges professionals working in the food system are faced with opportunities to improve food production and distribution. As decision-makers attempt to balance these threats and opportunities in order to secure more sustainable production systems, the key question that arises is: What do we envisage as the future for agriculture and food production? With numerous voices advocating different and sometimes conflicting approaches, ranging from organic farming to wider use of GMOs through in vitro meat production, this discussion of the future raises significant ethical questions. We are all consumers. What we consume, how, and how much, has consequences of great moral importance for humans, animals, and the environment. Great challenges lie ahead as we are facing population growth and climate change and reduced availability of fossil fuels. It is often argued that key to meeting those challenges is changing consumption patterns among individual as well as institutions, for instance through reducing meat consumption, switching to organic or fair trade products, boycotting or 'buycotting' certain products, or consuming less overall. There is considerable disagreement regarding how to bring this about, whose responsibility it is, and even whether it is desirable. Is it a question of political initiatives, producer responsibility, the virtues and vices of individual consumers in the developed world, or something else? Many of these issues pose profound intellectual challenges at the intersection of ethics, political philosophy, economics, and several other fields. This publication brings together contributions from scholars in numerous disciplines, including philosophy, law, economics, sociology and animal welfare, who explore the theme of 'the ethics of consumption' from different angles.

Climate change is a major framing condition for sustainable development of agriculture and food. Global food production is a major contributor to global greenhouse gas emissions and at the same time it is among the sectors worst affected by climate change. This book brings together a multidisciplinary group of authors exploring the ethical dimensions of climate change and food. Conceptual clarifications provide a necessary basis for putting sustainable development into practice. Adaptation and mitigation demand altering both agricultural and consumption practices. Intensive vs. extensive production is reassessed with regard to animal welfare, efficiency and environmental implications. Property rights pay an ever-increasing role, as do shifting land-use practices, agro-energy, biotechnology, food policy to green consumerism. And, last but not least, tools are suggested for teaching agricultural and food ethics. Notwithstanding the plurality of ethical analyses and their outcome, it becomes apparent that governance of agri-food is faced by new needs and new approaches of bringing in the value dimension much more explicitly. This book is intended to serve as a stimulating collection that will contribute to debate and reflection on the sustainable future of agriculture and food production in the face of global change.

Food security will exist when all people, at all times, have physical and economic access to sufficient, safe and nutritious food to meet their dietary needs and food preferences for an active and healthy life (as stated in the Rome Declaration in 1996). Given the dimension of the current global food crisis, food security means adopting effective and specific actions at individual, household, national, regional and global levels. Food security invites us to reflect upon ethical principles like human equity, justice between current and future generations, respect for human dignity and sustainable food production. We strive to maintain our basic ethical convictions and engage in societal debates about other important values. While we do this, we may have to change our ways of life and learn to create new priorities in the face of global responsibility. Science and technology are key tools to reach the Millenium Goals, providing both society and decision makers alike with relevant information and new options within an ethical framework. The contributions found in this publication bring together the perspectives of a diverse group of authors. Coming from the academic world, the public sector and non-governmental organisations (NGOs), they provide the latest views on ‘Global food security: ethical and legal challenges’.

The first International Conference on Veterinary and Animal Ethics (ICVAE) held in September 2011 saw leading experts from across the world come together to discuss the most important issues of animal welfare in contemporary veterinary practice and research. This is the extended proceedings of that conference, enabling all those interested in this increasingly significant subject to benefit from the insights of those discussions. The conference was divided into four sessions: Principles of veterinary and animal ethics; Justifying ends - the morality of animal use; Ethical analyses of animal use; and Cultural, political, legal and economic considerations. Each session contained four or five papers, and these are presented here in full, as well as the transcribed question and answer sessions at the end of each paper, and a short post-presentation reflection from each author. Also included is the debate on the motion ‘Is it better to have lived and lost than never to have lived at all?’ which records three prepared responses to the question as well as registrants’ comments from the floor. This book is based on the assumption that “organic has lost its way”. Paradoxically, it comes at a time when we witness the continuing of growth in organic food production and markets around the world. Yet, the book claims that organic has lost sight of its first or fundamental philosophical principles and ontological assumptions. The collection offers empirically grounded discussions that address the principles and fundamental assumptions of organic farming and marketing practices. The book draws attention to the core principles of organic and offers different clearly articulated and well-defined conceptual frameworks that offer new insights into organic practices. Divided into five parts, the book presents new perspectives on enduring issues, examines standards and certification, gives insights into much-discussed and additional market and consumer issues, and reviews the interplay of organic and conventional farming.
